Spoiler: While Dr. King Shultz was always intended to be a good man (per both Quentin Tarantino's ideas for the character and Christoph Waltz's condition that King never do anything evil in the role), he was never intended to be a perfect person in two ways. One is that, as he bluntly says at one point to Django, he makes his money by killing people and turning their corpses over to the authorities for cash. The other is that Shultz was presented as both overly proud and a control freak. And this latter trait led to his death, as he was so sickened at having to deal with Calvin Candie that he shot and killed him, leading to his own death when Butch Pooch shot him in return.
