In an interview with the Dutch VPRO TV guide at the time, Juliette Binoche said that she felt attracted to the script, because "it combines a certain poetry with a plea for vitality and tolerance. I think it is beautiful how the various characters evolve in the course of the story". She added that she mostly chooses films which take a specific event to tell a universal, humanistic truth. "In a romantic comedy like Chocolat, this aspect tends to get a little overlooked, but that doesn't mean it's completely absent".
