The matador imagery is a memorial to Leto's father Paulus Atreides, who was killed during a bullfight tampered with by a Harkonnen assassin in the prequel novel "House Atreides" written by Frank Herbert's son Brian Herbert and Kevin J. Anderson. The severed bull head is that of the bull that killed him.
