Gaston's backstory is explained in a deleted scene: in 1740, the 16-year-old Gaston saved the village of Villenueve from Portuguese marauders and enlisted in the French Army to fight in "the war". Given the year, this means the war that Gaston and LeFou fought in was the War of Austrian Succession, which ended in 1748.
