After Bilbo beats Gollum at the riddle game, and Gollum becomes upset, he goes to reach for the ring which he discovers is gone. And this sets off a chain of events leading to Bilbo's escape. Gollum intended to use the ring to become invisible, to then attack and eat Bilbo.
