The Bagel and the googly eye are inverted colors; the Bagel being a black ring around a white circle and the googly eye being a white ring around a black circle. So when Evelyn turns the bullet into a googly eye and places it on her forehead it is the opposite of all of the Alphaverse attackers who have a black ring on their foreheads. Since it was Waymond who had been putting googly eyes on inanimate objects to try to lighten life around their house it shows Evelyn's acceptance of his plea to show love, which allows her to defeat the Alphaverse attackers by healing them and giving them what they need.
