It wasn't in the script for Aragorn to decapitate Lurtz, it was Viggo Mortensen's idea as he was so in the moment that he just went for it and Peter Jackson decided to keep it in so they made a dummy prosthetic of Lawrence Makoare's character of Lurtz. It was also Mortensen's idea to cut off Lurtz's right arm after having the real knife thrown at him which he luckily deflected in time.
