At 12:10, when Rapunzel expresses her birthday wish to see the floating lights, Mother Gothel is lifting an apple out of a basket. Apples also represent the fruit of the Tree of Knowledge, the eating of which leads to humans gaining self-awareness and wisdom, which precipitates their literal and metaphorical departure from a sheltered existence. As Rapunzel continues to speak, Gothel puts the apple back and out of sight, showing her intention to keep both knowledge and freedom from Rapunzel.
