Before she could film her scenes, Gloria Foster passed away from diabetes, and The Wachowskis had to re-cast the role of The Oracle, for which Mary Alice was chosen. The Wachowskis decided to establish that in The Matrix universe, programs living inside The Matrix can change, and choose their forms and appearances. In the Oracle's case, it is explained in Enter the Matrix (2003) that the Merovingian had taken her current residual self-image to punish her for helping Neo, forcing her to revert to an older avatar with limited capabilities.
