In the opening sequence in Jerusalem which introduces the character of Hercule Poirot as well as establishes his desire for balance and symmetry in all aspects in his life, including meals in a restaurant/hotel, Hercule orders two hard-boiled eggs and asks for the breakfast order to be redone after rejecting the eggs for not being the same size. While, as previously said, the scene establishes Poirot's quirks regarding balance and symmetry in his life, it's also possible that Poirot sent the eggs back to make sure that the policeman working for him had enough time to find the relic in the Chief of Police's office.
