According to Ridley Scott, scenes where Maximus picks up a piece of dirt and smells it before a battle, signifies mortality and the possibility that he could die there and return to the soil/earth he occupies at that moment. Scott further mentions that it could also denote a kind of good luck charm or talisman that Maximus uses to evade death. It also relates to the fact that Maximus, who is a farmer, tries to remember his farming life and wife and child every time he picks up a piece of the earth.
