According to Dan O'Banion, HR Gieger, and Ridley Scott through interviews for various "behind the scenes"/"making of" documentaries about the film, at one point both the Face Hugger and the Xenomorph were going to have eyes. As shown in the concept drawings of the characters, the Face Hugger was supposed to have one single eye in the front-center of the body between the webbing of the two sets of fingers and the Xenomorph would have two large eyes, variously shown either as bug eyes or eyes resembling the lenses of sunglasses. However, no one was really satisfied with the look so they decided it would be more unsettling to the audience if the creatures had no eyes and were guided solely by instinct. However, if you look at behind the scenes footage of Gieger building the Xenomorph costume, the head does have a human skull head beneath the smooth top of its head and that the elongated head itself is actually thick, but translucent. So, the idea may have been that the Xenomorph does indeed have eyes that are simply shielded/hidden underneath the smooth skin of the head instead of visible on the surface of the head.
