(at around 2h 25 mins) The scene in which Benjaminen Guggenheim declares that he and his valet "have dressed in their best and are prepared to go down as gentlemen," which he actually said during the sinking, was originally supposed to feature him saying goodbye to John Jacob Astor, who is looking for his dog so that he won't die alone. James Cameron was unsure how to block the scene so that they would be close to each other, so he suggested that he say something else in addition to his line. Michael Ensign then ad-libbed "But we would like a brandy!", though the bit with Astor was ultimately cut.
