Although Luffy won his fight against Charlotte Katakuri; Katakuri was more skilled, stronger, faster, and smarter in using his opponents techniques against them & in a more efficient method. Katakuri has also a stronger color or arms than Luffy has as you can clearly see Luffy being hurt as they're Haki fists collide against each other. Also, Katakuri has trained beyond the normal; Haki color of Observation anyone has; as he can now see specs of the upcoming future, rather than simply sensing his enemy's upcoming attack.
