Sauron's War of Conquest seen in the prologue actually condenses many centuries of fighting, which are fully mentioned in the Silmarillion novel. It started with the Battle of the Gwathló, after which Sauron was driven back to Mordor, where he rebuilt his strength over the next 1,400 years and the War of the Last Alliance began. Five years in, the Free Peoples defeated Sauron's forces at the Battle of Dagorlad just outside Mordor, and invaded the region. Meeting heavy resistance at Sauron's fortress of Barad-dûr, they laid siege to the tower for 7 years, ending the war with the duel between Sauron and Isildur. According to the book, Sauron's body was left broken without its spirit, and the Alliance forces leveled the Barad-dûr tower to its foundations.
