After the T-1000 drives the truck into the canal to chase John, before the truck loses it's roof it crashes into the canal walls several times, and there are shots showing the truck has lost its side mirrors. There are shots later where the truck is still shown to have its side mirrors, even after it loses its roof under the low bridge.
