(at around 1h 24 mins) The balancing ship "Santiago" starts to topple over because Jack picks up a heavy gold object, which wouldn't happen because his weight increases by exactly the same amount as the gold does. However, even though the weight itself wouldn't change, adjusting the height of the object (by lifting it) would affect the overall balance, by changing the center of balance of the whole ship, causing the ship to lean in that direction.
