In order for Lou and Yen to get away with stealing the rest of the jewels, the monitors would have to be rigged so that they would be on a recording loop. As the cameras are recording them entering the exhibit then setting-up, security would have been dispatched immediately. Moreover, as Nine Ball had been directing the gang via her laptop, it doesn't make any sense for Debbie and Lou to not use her in this situation.
