The Captain (Hanks) orders "fire as your guns bear" which was used in the age of sail when cannons only aim left or right a few degrees. The guns had to wait for the ship to turn. However the aft guns were limited so as not to fire into the superstructure, so they would fire as the U-Boat was brought into sights of the guns.
