Nitroglycerin cannot be simply mixed up in a matter of a minute or so. It requires careful and precise work (ideally under a fume hood), and very careful watching (the mixture has to be within a slim temperature range or it'll either not form nitro or explode prematurely). Also, nitroglycerin requires nitric acid in addition to the sulfuric we see him use.
