Boba Fett knows that Darth Vader is hunting for Luke Skywalker, and wants him alive. He would have told Jabba the Hutt about this. It is in their best interest to turn Luke over to Vader for a reward, rather than feeding him to a monster and wasting this opportunity, and possibly incurring Vader's wrath.
