When Dorothy speaks to her Aunt and Uncle for the first time, he appears to be removing eggs from his hat and placing them under a chicken in a cage. There is no situation where a farmer would do that. However, he is actually removing live chicks from his hat and placing them under the chicken. The dialog bears this out: "This old incubator's gone bad and we're likely to lose a lot of our chicks." Throughout the scene, the sounds of chirping chicks can be heard.
