Adaline's telomeres were described as having regained flexibility after her second electrification, allowing her cells to begin aging normally again. It is not the flexibility of telomeres, but their length, that determines the survivability of a cell.
Further, the electricity was applied only to a small part of Adaline's body, yet somehow all her cells were affected.
