According to the lore by Tolkien, Wizards are members of the Maiar, angel-like beings who don't need a physical body for existence (Sauron himself is a fellow Maiar). Saruman as a Wizard is a Maiar, so a stab (or a slit throat in the book) from a human shouldn't kill him.
