(at around 1h 10 mins) Hoffman kills the coroner and his assistant by stabbing them vertically through the chin. The area where he stabbed them is mostly flesh, and despite being in the head, isn't near anything vital. The knife blade is not long enough to penetrate beyond the nasal cavity. Even if it did breach the cranial vault, wouldn't have gone deep enough to cause significant brain damage, let alone instant death.
