Despite Control being so secretive that not even his own employees know his name, Connie Sachs is able to show Smiley a picture of him in a military uniform. With that picture Connie (or anyone else in the Circus records) would have been able to identify rank, regiment, and date - and therefore with a little research - Control's name.
Correction: there is no indication in the movie that Control is so secretive. Indeed, in the very first scene, an employee is called to Control's flat - obviously this would not happen if Control was trying to hide his identity. The name Control could be a simple nickname coming from his position in the organization.
