The police showed up at Mr. Dayan's door right after Cotton discovered pot at the bakery, leading one to believe Cotton had told the police. Yet this isn't the case, as it later appears that Cotton was keeping the secret in order to drive Nat out of the bakery, and because after the arson when Victor told police pot was being baked into the goods, police told Nat they didn't believe it. So, why did police initially speak to Nat about Ayyash--simply to warn a friend his new employee had potentially been involved in shenanigans? After all, the police had not ever charged Ayyash with anything, even after the night club incident; and if police didn't later believe Victor's story, what could they have told Dayan that would inspire him to run right to the shop and accuse Ayyash of baking pot into the goods? It's quite a stretch that Dayan--but not the police--guessed exactly what was happening, and a coincidence this happened right as Cotton discovered it.
