When Owen says he made a promise he'd bring Beta home, Ian Malcolm says, "You made a promise to a dinosaur. How about that." While he is correct that Own made the promise to Blue, Owen gave no indication as to whom he made the promise to, much less that it was made to a non-human. Ian should not have known that Owen made a promise to a dinosaur.
