When Elle goes to the hospital to kill the Bride, the Bride has long blonde hair. We don't know exactly how long this is after the fight at the church, and all the Bride's wounds appear to have healed, but she would have had her head shaved to treat the wound in her head from the bullet. Her hair would not have grown back so quickly.
