When Chief Brody throws the air tank into the shark's mouth, he throws it in bottom-first, meaning the valve part is sticking out of the shark's mouth. Later, when the shark is charging him, Chief Brody is shooting at the tank, it's reversed and now the bottom of the tank is sticking out of the shark's mouth.
