When Melvin comes out of the shop screaming, he has a Graboid tentacle around his neck, which seems very flexible, even though it's been ripped off 12-14 hours earlier and the rigor mortis should have set in by then (in humans under typical conditions it takes 4-10 hours). However, rigor mortis progression depends on many factors, including animal physiology and ambient temperature. In a cold environment it could take days even in humans, and it is highly plausible that Walter kept the tentacle in a refrigerator most of that time. Moreover, Graboids are extremely unusual creatures with weird biology, so human standards don't have to apply.
