When Earl, Val and Rhonda are stranded on the boulder, a time-lapse shows day turning to night, and the stars become visible as the sky darkens. However, the stars are frozen in place. The time-lapse should show the sky turning significantly during the time elapsed. Additional proof that this was not time-lapse is that everyone is still in the same position at night as they were in the daylight. Either there was a camera lens adjustment, or the change was done during post-production.
